Green Curry Pizza
Pizza is a frequent dish at the I AM Community. It’s all about the cobb earth oven in our garden. The smoky flavor it gives pizza is just a taste to never tire of.
A Thai flavored pizza typically has no tomato in it, and only a little cheese, what it does have is plenty of Thai ingredients. This one is green curry pizza, using Thai green curry paste to add some spice to the topping.
Premade Pizza Dough from Trader Joes
1 Tablespoon Green Curry Paste
1 cup of sliced Asian eggplant
1 cup red and yellow bell peppers
1/4 cup of chopped Thai basil
½ cup Coconut Milk
1/3 cup Water
1 Teaspoon Sugar
1 Teaspoons Salt
I cup Grated Cheese
Roll out Trader Joes Pizza dough and place on an oiled and floured pizza pan
Fry the coconut milk with the green curry paste for 1 minute.
Heat the oven to 400F, and cook the base for 10 minutes, it should not be fully cooked, just dried out and slightly risen.
Add the curry, toppings, and the cheese to the pizza. Turn the oven up to 450 degrees and cook for a further 5-10 minutes until the cheese is melted. For Thai pizza its common to have the cheese just melted but not browned.
